- 2 tbsp of Olive oil
- Eggplant strips
- Dill
- Dijon Mustard
- Ketchup
- turn on the oven to 375 degrees
- Cut up a whole eggplant intro strips (leave the skin on as there are great nasunin, which helps protect lipids in cell membranes)
- place onto the baking sheet, add olive oil/salt
- bake for 7 minutes
- Done! add some dill and make a side of dijon mustard/ketchup dressing
