Ingredients: 
  • 1 tbsp of salt
  • 2 tbsp of Olive oil
  • Eggplant strips
  • Dill
  • Dijon Mustard
  • Ketchup

  1. turn on the oven to 375 degrees 
  2. Cut up a whole eggplant intro strips (leave the skin on as there are great nasunin, which helps protect lipids in cell membranes) 
  3. place onto the baking sheet, add olive oil/salt
  4. bake for 7 minutes
  5. Done! add some dill and make a side of dijon mustard/ketchup dressing
